1. Place the turkey stir fry strips in a shallow dish and scatter with the chopped lemon grass, the ginger, chillies and garlic. Blend the honey with the lemon juice and oil and pour over the turkey. Cover and leave in the fridge for at least 30 minutes, turning the turkey over occasionally during this time.
2. When ready to serve, preheat the grill, line the grill rack with tin foil, or heat a griddle pan or light the barbecue. Drain the diced turkey and thread onto the skewers.
3. Cook for 6-8 minutes, turning frequently or until thoroughly cooked. Sprinkle with the chopped coriander and serve with the rice and salad.
(Remember to light the barbecue at least 20 minutes before using)

2 lemon grass stalks, outer leaves discarded and chopped
Small piece root ginger, peeled and grated
1-2 red chillies, deseeded and chopped
3 garlic cloves, peeled and crushed
2 tsp clear honey, warmed
4 tbsp lemon juice
1 tbsp sunflower oil
4 skewers, soaked in cold water for 30 minutes if using wooden skewers
