

Turkey is a brilliant ingredient for healthy, tasty open sandwiches. Use different breads to ring the changes and let your imagination run riot with any fruit, vegetable or salad toppings – or use these ideas to inspire you:
Spread a slice of rye bread with light mayonnaise. Shred cooked British turkey over the bread. Top with slices of avocado and a handful of watercress or rocket. Add a squeeze of lemon juice and a generous sprinkling of black pepper.
OR
Mix together chopped cooked British turkey with a tablespoon each of light mayonnaise and low-fat natural yoghurt, plus a little curry paste to taste. Add a chopped stick of celery, chopped apple and a handful of sultanas. Spoon onto a slice of seeded bread and top with slices of red onion.
OR
Spread a slice of pumpkin bread with light mayonnaise. Top with slices of cooked British turkey and a selection of left-over garlic- roasted courgettes and red and yellow peppers.
