Turkey Tikka

This is a basic tikka marinade and can be used for various poultry meats particularly turkey breast.

Serves: 4-6
Preparation Time: 10 mins,  plus marinating time
Cooking Time: 10 mins

Ingredients

800g British Turkey breast  
knob of butter
150g plain yoghurt
40g fresh ginger
4-5 cloves garlic
½ tsp cumin seeds
½ tsp coriander seeds
½ tsp red chilli powder
¼ tsp turmeric powder
2 tbsp lime juice       
½ tsp garam masala powder
2 tbsp sunflower oil 
Salt & pepper to taste

Method

Cut the turkey into “tikka”, or cubes, large enough to be skewered, roughly 1 ½” X 1 ½”.

Rub salt, pepper and turmeric into the meat and set aside in the fridge.

In a blender, add half the yoghurt and all the other ingredients and blend to a smooth paste.

When the paste is smooth, remove to a bowl and whisk in the remaining yoghurt.

Check now for spice levels to suit your taste, adding more chilli if necessary.

Coat the turkey in the spice paste and set aside in the refrigerator over night or at least 4-5 hours.

Thread the pieces on skewers.

You can cook the tikka either on the BBQ or under the grill, but either way it needs regular basting to achieve a chargrilled, juicy appearance. 

The tikka should cook in 8-10 minutes. Turn them over once during cooking.
