Student Chef Competition 2013

Students from catering colleges around the country are being invited to enter a competition to become the British Turkey Student Chef of the Year 2013.

Twenty catering colleges are being visited between now and March for a talk on turkeys by a turkey farmer plus Chef Tony Robertson who will demonstrate how to use both dark and light meat in recipes.

Students are then being asked to enter a starter and main course dish using turkey thigh meat and breast meat. Entries will be paper-judged with 10 finalists being invited to a live cook-off later in the year.

The winning dishes will be the focal point of the menu at the annual British Turkey Awards dinner held in September. And the students will have the opportunity to work with the venue's chefs in cooking the meal for the most prestigious event in the turkey industry's annual calendar attended by producers, retailers and caterers.

This year, Laura Hogger and Antonia Morosi from Westminster Kingsway prepared the starter, a Thai-style turkey thigh kofta, crisp green papaya salad with honey yoghurt and deep fried tortellini. Kathryn Bash, from Colchester Institute prepared the main course – Stuffed and rolled British turkey breast served with a honey parsnip puree and turkey Scotch quail egg. All students, plus runner-up Chris Windle from Sheffield College worked with Executive Sous Chef Michael Stenekes at The Savoy to prepare the awards dinner which was served to over 260 guests.

Well done to all the finalists who were selected to compete in the British Turkey Student Chef of the Year cook-off, which took place at University College Birmingham on 9th May.

The judging panel included: Executive Sous Chef at The Savoy, Michael Stenekes; Sheila Eggleston, Stockpot Magazine; Tony Robertson, Consultant Chef plus Jeremy Hall, Bernard Matthews and Richard Hutchinson, Aviagen both representing British Turkey.

The standards of the dishes were very high and the judges had a difficult time in choosing the winners of the starters and main course, however the triumphant students are:

The winners received Russum's catering vouchers and will go on to cook their dishes at The Savoy for 250 guests at The British Turkey Awards on 27th September. Well done to them!
